For children, the RDA for fat and protein is a 3:1 ratio.  Seeds and nuts (and the butter that is made from them) provide this ratio, so many of these recipes are made with them.  If seeds and/or nuts are not used, care is taken in the recipe to provide both protein and a healthy source of fat.
